William Dalton Bottled-In-Bond Wheated Bourbon


William Dalton is a straight bourbon whiskey with the mash bill of 70% corn, 20% wheat, and 10% 2 row Caramel malt. Our use of Caramel malt brings a refined and sweetened note that truly backs up the traditional tones of the wheat. Secondarily is our use of our "house" yeast strain and a second brandy yeast that pulls forward herbal and fruity notes. We never sour mash our Bourbons in the traditional manner, but this bourbon relies partially on malo-lactic fermentation to bring forth the more earthy elements as well as the creamy mouthfeel. 100% double pot distilled. Barrel entry at 105 proof. We mature in a number 2 charred oak barrel (always 53 gallons) and in a mixture of Chai cellar warehouse and Dunnage. No Chill Filtration so some cloudiness when chilled is to be expected.

Aged exclusively in our Chai cellar using 53 gallon, #2 char barrels, and a 105 entry proof, as with all our spirits we do not chill filter this offering in order to leave as much of the flavor in tact as possible. Expect some cloudiness when chilled, it's natural.

APPEARANCE:

Burnt Amber and Rosewood

AROMA:

Eucalyptus, Honeysuckle, Caramel, Jasmine flower

PALATE:

Front: Light, sweet, lifting. Caramel highlighted by a light earthiness resolving to clover honey and light oak tannin.

Mid: Earthiness becomes more evidenced with a nice round mouth feel, borders on tart cherry. Bit-of Honey candy.

Back: A hint of white pepper and clove, honey resolves to an almost Baklava flavor before horehound candy steps in.

FINISH:

Horehound candy and grains of paradise, phenolic blackberry/dark fruit char acter and nutmeg.
